Suggestions for light weight would include fiberglass bumper brackets and fiberglass bumpers, plus a fiberglass hood and a fiberglass decklid. These are all available from Crites Restorations, and if my experience is any guide the quality is pretty good. Each part will save you 50 pounds, for a total of 200 pounds weight savings.
If you aren't going any faster than 11.50, you don't need a roll bar or roll cage to meet NHRA tech. Not having that would also save you some weight.
I forgot it was 11.50 thanks I was thinking it was 11.99 anyhow my best friend has a 64 basically the same car and he got every glass piece Crites has for the car less the doors. So I've seen that Charles makes some good stuff. I'll probably do the same as the doors are pretty pricey and I'm not wanting any window issues. I wish I could afford a Pond block etc but for now at least I'm looking for a 390 based motor hoping it'll get me into the 11s at 2800 ft elevation. My other buddy's had a 64 with a 466 c4 combo and no fiberglass except the hood basic Dove motor juice cam intake and headers and went 11.92 best at Norwalk a few years ago. That's part of the reason I was leaning that way but I just really enjoy the whole nostalgia part of an FE 4 speed maybe even NMRA/ Funford nostalgia class racing. They're the only Ford events out this way and it's at Ennis 5 hrs away. Everything is Chebby out here, two things I miss from living east of the Mississippi is friends/family and Fords.
