Originals are .500 deep.  6 threads on them.....As long as you don't bump the cylinders inside, it won't matter.

The big electrical type plugs will hang out the sides of the block  good bit and can interfere with the motor mounts.
We buy plugs in bulk and machine them on both front and back to get them closer to the OEM thickness

I bought a second tap and cut it off sorta like it would be a "bottom" tap. We thread the hole a little deeper without hitting the cylinder core, so we can get a little past flush.  I got some brass recently somewhere that we're .750 thick.....square socket head, but they worked good.

I just installed some plugs on my own block last weekend. I got the ones from DSC that are .650" thick. They have a 3/4" hex drive. I have two taps and as Blair mentioned I cut one down about 1/4" shorter so I could use it as sort of a "bottoming" tap. I only needed the short tap for one hole, all the others threaded with the long tap without hitting a cylinder.

I use Dennis's plugs on the race motors. Set them with epoxy,  then block fill. After everything has set and is good I dake a angle grinder with a grinding wheel and make them flush with the block for a nice neat custom look. I also have used the 1-1/2" brass clean out plugs on street engines.  A good flap sanding wheel on the angle grinder smoothed out the rough cast and makes them nice and purrrdy lol. Looks good with a nice painted Ford blue block .

Would bottoming against a cylinder be a bad thing or would it provide a little more strength?

It would distort the cylinder
