Back when these engines were new Ford had an oil filter adapter on some 427's that had 2 ports, one for the oil pressure sender and one for an oil temp sender. The originals are rare and expensive. Here's a picture ( not my part, picture from ebay ):

There are FE parts suppliers that make modern copies of the dual port oil filter adapter, here's a link to one:

Common for race cars to weld a fitting or bung to the oil pan for the oil temp sender, but you can do it from the oil filter adapter or T fitting also, especially if you are using an electric gauge with a compact sending unit.
I think most aftermarket tachometers run a wire to the negative side of the coil to pick up a rpm signal. If you run an aftermarket ignition system, like a MSD, they usually have a "tach" output connection on the box. Factory Ford installed tachs use a different system.
