I've found that having the ability to circulate coolant throughout the engine between rounds is critical to being able to stay competitive in bracket races.

that along with electric fan you can cool your engine off real quick between rounds ..... I ran a edelbrock with Mr.Gasket electric water pump drive for years before switching over to a Merzie electric pump ..... I street drive my vehicle too , works fine

Same here, electric water pump and fans, so no need for pulley alignment.

If you use a motor plate using the water pump bolt holes how do you get the water pump pulleys to line up properly?

I see two options: 1) machine the block face the depth of the block plate or 2) machine the back of the water pump which really means you also need machine a spare.

Never heard of either of these being being done so I'm probably overlooking a simple solution.

Spacer behind the crank pulley or different  pulleys or shortening the
water pump pulley or make new pulley
I have used all of the alternatives

Lots of spacers here and often the 351W spacers can be modified for FE use. Pump spacers are easy to make too.
