Get a good A/F wideband gauge and use that as a guide to tune your carbs. You will have to go into them several times to get your jetting right.  Your idle and low RPM cruise will be mostly on the idle circuit and you may have to adjust the Idle Air Bleed size to trim your cruise A/F ratio.
Now I'm running dual 1850's,similar to the BJ/BK carbs and first run on them jetted as a stock 1850 Primary 66 with 6.5 PV and .067 metering plate secondary was really lean except idle and off idle was rich.
Finally got the idle...cruise and heavy accel on primaries tuned with Primary 67 jet...8.5 PV and larger .070 Idle Air Bleeds
Still working on WOT when secondaries are open but my LM-1 is down and a AEM Wideband gauge is on the way.

My setup,not a FE, but a 427 cube Dart based Windsor in the 530 HP range. Intake manifold is very similar to the low rise or medium riser FE dual quad intake. Cam is a 241/249 @  .050 with .600 lift hyd. roller and heads flow in the 330 range at .600 lift
I now have a 13.7 to 14.0 idle and cruise with a 12.9 when PV opens at heavy throttle on primaries only before secondary kicks in.
I like to follow you FE guys with the dual quads,since this is my only source of setting these things up.
