We lost our local Lincoln dealer - it was Lincoln/Mazda until recent. I took all my warranty work there because they are top notch.  The local Ford dealer - not so much.  Oil change probably OK, but the warranty work they did on our 2020 F-350 required two rollback trips to complete, and that's been kinda par for a long time.  The next two Ford dealers are 30+ miles. Lincoln wanted an exclusive location and a new mutil-million dollar build, the existing dealer said "no thank you".  If you want real Lincoln service here, it's 145 miles to the next dealer.

Because race car/drag strip and aluminum radiator I run nothing but distilled water with some "water wetter" (Summit brand) for a little corrosion protection.  I also rig up my Stant radiator tester to pressurize the block before installation in an attempt to sort out any potential leaks. I run 351C type top end so depending on the shortblock there are multiple potential leak spots.  Add a motor plate type thing to mount a crank trigger, vacuum pump, etc and there's more gaskets and layers. I never, ever load a Windsor without a pressure test - wet intake good place to lose water, either front or in the back especially when mixing aftermarket intakes with various cylinder heads.

What I did on my friends 500s:
#1427 - .098 jet
#1445 65/47 rod (2 steps)
#1464 spring kit - Orange spring.
Drilled shooters - hip shot on size LOL.  Hammer to fit, bend to suit.

I forgot to mention that BOTH 500s did not open the secondary blades all the way.  Both required tweaking the linkage rod to get the blades 90 degree to the base plate at WOT.  Things were way off.  So look for that also.

Per Barry - yes, as those 500s sat on the motor, they sucked.  Stumble, stutter - you name it.  Junk tuneup.  Put the 600s on and it ran like a scaled ape. And that was a 331 Hemi with terrible idle vacuum and unknown internals.  Doesn't sound nor act like a high perf motor.   I was glad to make the 500s work well enough.  Wasn't sure they were going to work. 

I'll try to remember to look up the 600 specs tonight.

I ran two 1406 - 600s - on my 302 tunnel ram with no issues.  I just did set of 500s for a friend, in order to get back my 600s that I loaned him  They ran so well on his 331 hemi/32 Ford that he wanted to buy them.  I did about the same on both sets - one step rich on pri/sec, or as close as you can get to that.  I drilled the shooters to around .035.  When they put the 500s back on the 331, they had to set the accel pump arm to minimum throw, so that's different.  Said the max throw was pushing too much fuel.  I would have rather put .031 stockers back on it to see how that worked.  But my friend is happy with the performance and I got my carbs back LOL.
 
The 600s have the accel arm set for max travel.  The 600s ran 1:1, but that car has 4.56 gear and a big converter.  The 302 is a mild motor - maybe 300 HP in good weather.  216/228 hydro flat, 9.5:1.  On the track the 60' was a tad softer than the go-to 650 DP and Air Gap but still sharp. MPH and overall performance was the same.  An added plus is that it upset the hell out of everybody (them ain't no Holleys!) ;~)

I think t would be interesting to try the 600s or some 750AVs on a larger - 351+ - type engine.  The later modes have some tuning for secondary tip-in that could be useful for drag strip performance.   I have not tried the 600s on my 351C - when our local track closed, that put the kabosh on my Friday night hours of experimentation.  It would be interesting since the 351C ram has fairly minimal plenum but rather large runners as you'd expect so pump shot may be the largest tuning issue.  And you have to pull the top of an Ed to change the shooters, so it take a while to swap on a dual carb deal!

The dual Holley TBs provide a total of 800 lb/hr which should be plenty for 650HP on methanol.  Rule of Thumb for most bracket engines is 1 lb/hp/hr on methanol.  The TBs should be able to handle that at less than 100% duty cycle.

Try running a 195F thermostat and see if that changes things.  For whatever reason, your "recored with a new "high efficiency" core" is not transferring heat out of the engine very efficiently.  If you're talking copper core and they put in a tight fin count/4 core then you've been - IMHO - had.  Been there, spent that, scrapped that. By the time the air gets to the 3rd and 4th core tube it's already hot and does little to no good. And a tight fin count is as much restriction as surface area, requiring hella fin displacement to pull enough air though it to work.

Another vote for Ceramic Seal.  I've used it a few time for various issues and it works good.  Sealed up and 2" long exterior crack in the water jacket on a 351C and held for two race seasons.

You young punks don't no nutin', we had to carry those old forged pistons that weighted 2 lbs each up hill both ways just to get them in the block.

I use an adjustable pushrod to set the geometry, then send the length measure(s) to Brent at Lykins.  Money changes hands, yada yada - poof!  Pushrods.

The new large language AI models will help competent people save time in research and content collection.  That's good.  It will also help incompetent/think-they-know-but-they-don't people generate a lot of sudo-factual garbage.  About like everything else, really.  Think self driving cars.  Will be an assist to smart drivers, disaster in the hands of the idiots that already can't handle cars with the big wheel in front of their face.
