Good info.
I haven't built a 289 in year's but am still interested in them. I did find some of your other vid's interesting and will have to go back and watch them when I get time.
It just so happens I am helping my chevy loving friend build a 390 for his 55 Mercury and I wound up with his great running 312.
He was going to put a LS in it but I told him I would never talk to him again if he did.
Told him he should have left the 312 in it.

Right now I am planning on keeping it. Looking for a body to put it in.
I got the 312 carb cleaner to pan with all accessories along with the bell housing, complete clutch system ,3 speed with working overdrive and control's.
If I can't get to it in the future then I might get rid of the set up.

Nice results, near 1.50 hp/CID.

Interesting as 302 Windsor based SCCA racers get at best approx. 505 hp, yet they are full race engines with few rules except iron heads, ported to the max. Been told slapping on a set of say AFR 165's will net approx. 40-50 more hp where rules allow.

That test is 3 and 4.  The engine made 448-460hp depending on the intake manifold. 500hp is certainly doable if went race gas and added a couple of points of compression. The cam was advanced a bit trying to keep the power down at 7000 rpm. Letting it get closer to 8k would help if you were looking for power.
