How far should the driveshaft yoke actually stick out of the back of the trans when the vehicle is sitting on the ground at rest ? Anybody know ?

Thousand different yokes out there.
Undo the ubolts at the rear end pinion, slide the driveshaft forward. Mark the yoke where it touches the seal with marker or chalk. Reinstall driveshaft. Measure distance from mark to seal.
Should be 3/4-1.25inches. I've seen a lil more and a lil less work as well depending on how much the rear end moves.

I have shorted a lot of drive shafts. And i can say
it depends on the rear suspension some push, some
pull out the drive shaft when traveling
But with most paralell leaf suspension where the drive
shaft point upwards to the trans you need around an inch
