I have two Holley 1850's to rebuild and modify for use with a Ford medium riser 2x4 intake manifold. I know Holley used to have the best rebuild kits, and folks wanted to steer clear of other brands because they weren't as good quality and/or didn't work as well (different needle and seat, power valve opening different shape, etc.) With Quick Fuel, Demon, Edelbrock, Jegs, etc. now making Holley rebuild kits, just wondering if they still have the best?

Holley is a sure thing, but I have also used an AED kit and it was nice stuff.
I doubt anything is better than Holley, but I also would assume the AED and QFT are as good.

A Holley kit would be my first choice. Holley has discontinued the rebuild kits for some of their less popular carbs, or they sometimes tend to be extra expensive - for something like that I've noticed Quick Fuel might be an alternative, although I haven't tried one yet.

the holley kits give me a little more peace of mind than any of the aftermarket stuff.jmo

I personally have been using Hygrade kits with awesome luck! Build a ton of carbs for people and have been using them. Black non stick stuff. Looks great! And they fit very well.... JMHO
