Recently I tested some loctite 272 on a bolt, because I had it for quite some time and it did not harden at all.
It looked completely normal when applied to the bolt, but did not harden at all.
Just a heads up if you're like me and buy the big bottle.
I'm pretty sure this bottle was over ten years old though.
I guess I'm just amazed that it did not change consistency.

Yes, it does, especially if the cap isn't secure enough to keep out air as the lighter and more fluid chemical elements in this anaerobic sealant can evaporate over time. Often, one can tell if it's bad or going bad as the fluid congeals/thickens when compared to a new bottle/tube. In your case, it seems to have gone bad even though the consistency is the same. Excess heat or cold can do it in as well.
