Cheap and quick? 
Assemble one side without a head gasket. 
Rotate it around. 
If it does not touch or bind you know you have at least a "gasket's worth" of clearance.
If it hits somewhere you can paint the piston with a black Sharpie & re-test - it will leave a mark showing where you need to add some more room.

I've been down at those tight clearances Brent mentioned - - and I have pulled engines down later and seen some witness marks from the valves and pistons getting together just a "little bit".  Nothing catastrophic - but not very confidence inspiring.  For confidence sake I would add .010" to the low end of those numbers and run it.

Edelbrock heads with a 2.200 intake will clear the cylinders on a 428 with no issue

You don't need much clearance there.
Them parts aint supposed to move around too far - or you have much bigger problems.

Those heads - as delivered - can support over 600 HP.  The cam you have was selected for high torque/modest higher power/RPM use.  While you can always port the heads for more power in a race or semi-race application, that small of a cam will always be more of a limit than anything else.  Want more power - go with a larger cam - move the effective RPM band up. 

In all honesty, low end torque is rarely a concern in a car as light as a Cobra.  With most cam/intake combinations those heads are going to get you between 1.2 and1.3 lbs of torque per cubic inch.  The cam and intake selection will determine where in the RPM range that torque peak comes.

I can tell from testing that a large single blade throttle body (flying toilet..) made more power than a 4500 throttle body on a Victor EFI intake of roughly 700 HP.  I can also tell you that that single blade throttle body was nearly undriveable on the street, where the 4500 was fairly pleasant and remains on the car today.

Echoing the crowd.  I use a ton of Powerbond on street applications.  Usually move to the Romac on more serious builds.  ATI for true race cars where fabricated pointers and modified pulleys are pretty much normal anyways.

We use the same Duplicolor often.  I like the results when I stand back a bit and dry spray "fog" it on from a distance of 18" or so.

I posted a comment on the YouTube channel.  He seems like he is kinda lost on that one.
The big rollers are just wrong as a solution to the problem he is having. 

I have built several SOHC engines - not nearly as many as Neighbor or others - and have never had that issue. 
I also suspect that the cams and/or valves are seriously incorrect.

I do think that the elephant's foot adjusters are stupid, and eliminate them by having T&D make rockers with a roller at each end, and adjust the valve lash with selective lash caps. 
Bill C has tested and proven that combination of parts a long time ago.  On an SOHC you can set cold lash on the workbench before assembling the engine.

I degree the cams like two four cylinders - "leading" cam first - second cam after. 
Seems to work for me and addresses any cam to cam chain deflection/stretch - at least cold.
Jay has tested variance in timing as a tuning tool, but I feel you should start at the card specified event numbers and tune from there.

I also toss the front cover snap ring concoction and fabricate a "normal" thrust plate for the stub shaft.
Why on earth would you want a non-confirmable, gasket mounted item pulling on a critical fore and aft alignment assembly.

A Holley 8082 2 circuit 1050 is a really user friendly carb on a 470-530 cubic in engine that makes some power IMO. I’d definitely try one if I was you.

That 0-8082 is the Dominator version of a 750 double pumper.
Might not be "perfect" but works damn well on damn near everything you bolt it onto.
